The mash leans heavily on estate New York rye, including the distillery's own Pedersen Field Race hybrid developed with Cornell, rounded out with New York corn and malted barley, then aged seven years in new charred oak. We love this one for its deeply local, farm-driven character and the honest weight that bottled-in-bond status guarantees.
